PERFECT CHEESE SAUCE

INGREDIENTS (Makes 4oz of Sauce)

  • 1/4 Cup (60g) Milk (I prefer whole milk)

  • 1/2 tsp Sodium Citrate

  • 3oz Cheese

    • For my cheesesteak sauce I use 1.5oz Mild Provolone and 1.5oz White American, but any cheese would work

STEPS

  1. In a skillet or saucepan, heat over medium-low heat until simmering.

  2. Whisk in the sodium citrate, then add the cheese.

  3. Whisk or stir frequently until all cheese is melted.

  4. To hold until ready to use, place a lid on the saucepan and turn the stove to the lowest possible heat. Stir every few minutes, and adjust the heat as needed to keep the sauce smooth.
